Gherkins in natural vinegar comes in grades ranging from 120 to 400 fruits per kilogram, with an average fruit count of 140–350 per kg. The fruits feature an olive-green to light-yellow color, a sour and salty taste, a firm texture, and a characteristic acidic aroma.
